Chickpea and Grilled Pineapple Salsa

Create a protein-rich dish using chickpeas and grilled pineapple.


  • 2 cups Cooked chickpeas
  • 1 ea Grilled pineapple
  • 1 ea Minced jalepeƱo pepper
  • 1 bunch Grilled green Onions
  • 1/2 cup Chopped cilantro
  • 1/2 cup Minced red onion
  • 1/2 ea Lime
  • Salt, pepper to taste

Notes on Grilling

For grilling the pineapple, remove the outer seeds and skin of the fruit and cut into large, flat pieces. Season and lightly oil the pineapple before placing on a hot grill. Once cool, cut into a small dice.

Mixing and Seasoning

Something as simple as mixing a few ingredients can have high potential to taste good. For this, consider just salt, pepper, and a squeeze of lime. However, a simple vinaigrette will also add flavor, but keep in mind that the flavor and juices from the pineapple will intensify over time.
